Dorito casserole

I think we used to call that "Corn Chip Chili Pie Casserole" but my wife, being from Ohio and thus hating anything that has the word casserole in it, required me to change the name to "Corn Chip Chili Cheese Stuff".

It's really just a baked nacho/chili fusion.

Not all folks from Ohio, but my wife is scarred from years of inedible things called casseroles. Also by floating lettuce and other shit in jello.

Frito pie is a thing around here. It's just corn chips with chili and cheese on it. It's not really layered like a casserole, though.

The way we make it is you essentially cook up some chili or, if you are especially lazy, a can of chili. Then you layer tortilla chips in a cooking dish, cover with shredded cheese (or as I call it, "sprinkle cheese"). Pour some of the hot chili over it. Then another layer of chips, layer of cheese, chili, and so on until you have a final layer of chips and cheese on top. Bake for about 15 minutes.

The inside melds together into the gooey yummy mess while the top layer of chips stay crispy for a bit of crunch.

I'm pretty sure a large part of Ohio would starve if you took away casseroles.

We would starve without casseroles?

While they wouldn't starve, since there is Skyline and White Castle still, they wouldn't have quite as much to make at home.

I think that's called mexican lasagna in some parts of the country.

All those soggy chips make me shudder. Just mix the chili and cheese (making a queso dip) and leave the chips whole and dip them into the queso. Problem solved.

You probably don't like graham crackers soaked in milk either.

I like mustard. Brown, yellow, horseradish, chili pepper, course, fine, I like em all.

I'm kind of an onion ring snob. If you are talking onion rings from chili's, rib crib, outback, sonic, or most chain places, it's a hard thumbs down. If they are homemade with a crispy batter, I'm all in.

Good beer-batter onion rings are fantastic. I avoid most chain places when possible because the food is usually not that great anyway. We have a Chili's right next to a local Peruvian chicken place- the Peruvian chicken is so damned good I don't understand why someone would walk past there and go into Chili's ever.
