NBA: It's now unwatchable shyte, but I liked watching Magic, Byrd, Dr J., Kareem, and later Jordan.
MLB: When I was a kid, I liked Reggie, George Brett, The mad Hungarian, Valenzuela.
NFL: I have to agree that Barry Sanders may have been the most fun, inhumanly athletic, player I have ever seen in any sport. I enjoyed watching Walter Payton and his all bidness style of play, as well as Earl Campbell and John Riggins back when running people the Eff over was actually a solid strategy. Montana and Elway were fun to watch. Bradshaw, Swanny, Mean Joe, and the rest of those man-eating steelers teams were fun. Watching Staubach carefully take the play from Landry, then just do whatever TF he wanted was fun.
Tennis: Johnny Mac made it worth watching for a year or two.
Golf: Jack, Arnie, PLayer, Watson Made it fun because they were all great and pushed each other. Tiger because he was so dominant in the era of cookie cutter robo-swings.
