Pulled pork and beef ribs.
Are rib tips like burnt ends? |
That's what I assumed. |
Rib tips are typically pork, and I believe its the end caps from the pork spare ribs.
Burnt ends are from the "point" portion of a beef brisket.

Soy sauce is fine- I 'm guessing you only had cheap soy sauce that's in the little chinese food packets (mostly crap and HFCS) or Kikkoman. There are some Korean soy sauces with anise that are fantastic.

Soy sauce contains a mold that my gag reflex literally won't let me smell for very long. If it's used sparingly and buried in other flavors I can eat a little of it.

It looks like its a Louisiana seafood joint, that happens to do BBQ occasionally. But, it's probably close enough. My bad, I left crawfish boil out. Probably because seafood is nasty. | | |
