Yeah a good creamy bleu cheese is tough to find.

I Like crumbled Bleu with a V and O over the top of it.

Not that hard at all.

1. Rub with salt cure + sugar and pepper. Put in bag in fridge.
2. Flip over everyday for 1 week.
3. Rinse off cure and put uncovered in fridge for a day to dry out.
4. Cold smoke for ~9 hours.
5. Fry up and eat.

I'll likely be doing step 5 tomorrow. I'll try to take a picture or at least let you know how it went.
