I remember Rafa's in Cotati used to do the five pound burrito that was amazing, but you had to starve yourself for like three days before and after.

No, TexMex is the Americanized/bastardized version of cheap northern Mexican (Chihuahuan and Coahuilan) street foods. Think Tacos and Quesadillas and all the other stuff you find at places like Taco Bell/Taco Johns/Taco Time/etc.
Mexican food is as varied from region to region, just like food in America is. Chihuahuan cuisine is distinctly different from foods from Sonora, or Baja, or Mexico City, or Oaxaca, or the Yucatan.
It'd be like calling "New York Style Cheese Pizza" --> American Pizza. For most of the country, they'd seriously debate you on what "Pizza" is. This is why I cringe every time someone calls the crap they serve at Taco Bell "Mexican". Sure, it was inspired by a good street food in Mexico, but even Mexican people wouldn't claim it (thus its called TexMex). | |

In the Midwestern US, "salad" does not refer solely to greens with a dressing. "Salad" refers to pretty much anything non-cooked that accompanies a meal that has multiple ingredients and a "binder" of some sort (i.e. whipped cream, pudding, jello, etc.).
That said, I make some mean salads.
