Paramore's versions of Sweetness (orig. Jimmy Eat World) and Love's Not A Competition But I'm Winning (orig. Kaiser Chiefs) are both fantastic, as is the Fall Out Boy version of Beat It and Relient K's cover of Africa. I like all of 'em better than the originals.

Yeah, they never actually recorded either of those covers, but you can find decent enough versions on Youtube.
