This story had no emotional/thrilling impact on me whatsoever. I could not invest myself in the characters or plot as I had with LOTR. Not to say I was trying to compare it because I wanted to separate this from LOTR, but the movies did it's best to remind me how much it tied to LOTR thus diminishing the quality for me even farther.

I just think
Bilbo meets dwarves, they get into adventures with trolls elves and goblins
The gang gets into Lake-town, meets Bard and Smaug, Thorin gets all pissy
The gang gets into an epic war over the land or whatever

is a solid trilogy structure, if they had to make it into a trilogy.

It is. I like it but I think the individual movies needed a half hour or more cut from them.

I just really wish del Toro would've stuck with this. I think someone with a FRESH TAKE would've helped out greatly, and it definitely wouldn't have stretched into 3 movies with him at the helm. With PJ as director it has the same general look/feel as LOTR but since Hobbit is just a weaker/sparser story overall (and a much lighter tone which they could've shown better here) it just felt like a LOTR-lite rather than being its own thing
